Roasted Potatoes


2-3 lbs potatoes (any kind), chopped into 1 inch cubes
2 Tbsp olive oil
sea salt
freshly ground pepper
2 Tbsp chopped fresh rosemary

Mix all together in a bowl.  Place on baking dish lined with parchment paper.  Bake at 425 for 45 minutes turning half way through.
