Jamaican Jerk Rub:
- 3/4 cup chipotle pepper
- 2 tablespoons rosemary
- 2 tablespoons parsley
- 2 tablespoons basil
- 2 tablespoons thyme
- 2 tablespoons salt
- 2 tablespoons black pepper
- 1/4 cup lime juice
- 1/4 cup dry mustard
- 1/2 cup white vinegar
- 1/2 cup water
Sesame Ginger Dressing:
- 1/2 cup shallots, minced
- 1/4 cup garlic, minced
- 3/4 cup ginger, minced
- 3/4 cup red wine vinegar
- 1/2 cup soy sauce
- 1 tablespoon black pepper
- 2 cups vegetable oil
- 3 tablespoons sesame oil
- 3 tablespoons Worcestershire sauce
- 1/4 cup Sambal chile paste
- 1/2 cup mayonnaise
Jerk Chicken Salad:
- 6 ounces chicken breasts (jerk rubbed and grilled)
- 2 cups mixed salad greens
- 1 Roma tomato, diced
- 2 ounces sesame ginger dressing
- 2 ounces feta cheese, crumbled
- 25 fried corn tortilla chips
- Jamaican Jerk Rub: Use dry herbs only. Blend until smooth.
- Sesame Ginger Dressing: mix all ingredients in food processor. Remove and place in a bowl. Whisk in 1/4 cup of black sesame seeds.
- Jerk Chicken Salad: Toss mix salad greens, roma tomatoes and sesame dressing in large mixing bowl. Place on two chilled plates. Cut grilled chicken breasts into strips and arrange atop of tossed salad greens. Sprinkle with feta cheese and crisp tortilla strips.
